Celebrating National Oatmeal Cookie Day With This Delicious Recipe

April 30 is National Oatmeal Cookie Day, dedicated to celebrating the classic, chewy delight of the oatmeal cookie. As someone who doesn’t like super sweet foods, somehow, I absolutely love oatmeal cookies. The moment these cookies hit the oven, your kitchen will be filled with a warm and cozy aroma. So, in this article, I’m not just throwing any oatmeal cookie recipe at you. Nope, I’m sharing a special one that will leave everyone asking for more. Trust me, it’s a game-changer for oatmeal cookie lovers, and I’ve baked it so many times.

To start off, here are the ingredients you’ll need:

1 cup (225g) unsalted butter, softened to room temperature

1 cup (200g) light brown sugar, packed

1 1/2 cup (100g) granulated sugar

2 large eggs at room temperature

1 tsp vanilla extract

1 1/2 cups (190g) all-purpose flour

1 tsp baking soda

1/2 tsp ground cinnamon (optional, but recommended for flavor!

1/2 tsp salt

3 cups (240g) rolled oats

1 cup (150g) raisins (optional)

Instructions:

Preheat Oven & Prep Pans: Preheat your oven to 350°F  (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Cream Butter & Sugars: In a large bowl, mix together the softened butter, brown sugar, and granulated sugar until smooth and creamy.

Add Eggs & Vanilla: Add the eggs one at a time, beating well after each addition. Then, add in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.

Mix Dry Ingredients with Wet: Gradually add the dry ingredients to the wet ingredients. Be careful not to overmix.

Fold in Oats & Raisins: Fold in the rolled oats and raisins until evenly distributed.

Shape Cookies: Use a spoon to put balls of dough onto the baking sheets, leaving about two inches of space between each cookie for spreading.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden and the centers still look soft. For chewier cookies, take them out when they look slightly underbaked.

Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
