Cheesy, Garlicky Brussels Sprouts with Prosciutto

Long gone are the days where Brussels sprouts are the unwelcome vegetable you feed to your dog. Besides being really good for you, Brussels sprouts are really delicious, especially with this now not-so-secret family recipe. Plus, Brussels sprouts practically scream sophistication so, if you want to impress some friends, whip up this decadent and delicious dish. They’ll be left wanting more but they’ll just have to come back again to get in on your serious sprout game. You tease, you.

Cook Time: 20 minutes

Total Time: 30 minutes

Servings: 3-4

Ingredients:

12 ounces Brussels sprouts

2 ounces (3-4 cloves) chopped garlic

3 thin slices of prosciutto (can use bacon or pancetta)

4 ounces grated Romano cheese

2 tablespoons extra virgin olive oil

1/2 tablespoon garlic salt

1/2 tablespoon coarse ground black pepper

Extra virgin olive oil spray

4 tablespoons butter (divided into 4 pieces)

12 inch skillet with cover

Directions:

1. Cut the ends off the bottoms of the sprouts; then slice the sprouts in half lengthwise.

2. Place the sprouts, cut side up, onto cutting board. Spray with extra virgin olive oil spray, then lightly coat with garlic salt and pepper.

3. Heat skillet to medium high. Pour olive oil and chopped garlic into skillet. Distribute evenly.

4. Immediately place the sprouts cut-side-down onto the skillet. When all are placed in skillet, spray lightly with extra virgin olive oil spray and coat lightly with garlic salt and pepper.

5. Wait about 2-3 minutes until the bottoms of the sprouts are lightly browned.

6. Once browned, add prosciutto, Romano cheese, and butter slices.

7. Reduce heat to low, cover skillet, then shake skillet side-to-side to distribute ingredients evenly.

8. Let cook on low for 5-7 minutes or until the sprouts are softened to your liking.
