Three-Ingredient Air Fryer Pumpkin Muffins

This article is written by a student writer from the Spoon University at UFL chapter.

After scouring the internet for an easy pumpkin muffin to make in my dorm, I stumbled across this three-ingredient recipe that seemed too good to be true.

I consider myself a good judge of all things pumpkin, so I had to try it out for myself. Being a chocolate lover, I decided to add some chocolate chips to the top before baking. I can safely say that these easy air fryer pumpkin muffins are a simple and delicious way to get your pumpkin fix.

To start, all you need is your air fryer, cupcake liners, a can opener, mixing bowl and something to mix with.

Instructions

  1. Olivia Giovenco

Preheat your air fryer to 375° F. In a medium-sized mixing bowl, combine the pumpkin puree with the spice cake mix. Stir until all the lumps are gone (it might take a few minutes).

  2. Olivia Giovenco

Fill your cupcake tins about 3/4 of the way full with batter. Finish them off with some chocolate chips and arrange the muffins in your air fryer (I was able to bake six at a time).

Cook for about 12 minutes or until a toothpick inserted comes out clean and enjoy!

Pumpkin Perfection

This delicious muffin is a great way to enjoy the flavors of fall from the comfort of your dorm. The cake mix adds the perfect amount of spice while the pumpkin puree creates a delectable moist flavor. Bring these to your Friendsgiving and your friends will thank you.
