I’ve made a couple baked bries in my day, but this one tops the leaderboard so far. This specific baked brie is the perfect blend of savory and herb-rich. To make it a little sweet you could also drizzle some honey on top! It was so easy that literally anyone can make it.
Garlic, Rosemary, and Walnut Baked Brie

Begin by preheating the oven to 300 and opening up the wheel of cheese. While the oven heats up, prep all the toppings and crostinis. First roughly chopped the rosemary, nuts, and grate the cloves of garlic (if you don’t already have a microplane I highly suggest getting one, they’re cheap and so versatile). For the crostinis, rip up some slices of crunchy and fluffy French bread into rough pieces, then, on a sheet pan, lightly drizzle them with EVOO and salt and pepper.
Moving onto the cheese, score the top of the wheel in a criss cross pattern just to let the rosemary and garlic seep into the cheese and so the interior will melt faster. After placing the wheel into a square, glass, baking dish, spread the grated garlic alllll over the top and sides of the wheel, and sprinkle the rosemary and nuts on top.
Finally, into the oven the cheese and crostinis go!! My bread only took a couple of minutes to get nice and crispy, so make sure to keep an eye on it. The cheese will take anywhere from 10-15 minutes depending on the size and thickness, just keep checking on her frequently. When the cheese starts oozing out the sides and your nuts begin to put off a yummy aroma, it’s time to plate! I outlined my wheel with the crostinis around the edge of the dish.
