Have you ever tried cooking with beer? This was one of my first experiments making a beer-leavened bread recipe. I used Corona (mainly because I knew it was vegan and it was what my parents had in their fridge at the time), but you can also add a heartier stout to impart a different flavor. I really like how simple this recipe was to make. It was prepared in under five minutes and quickly in the oven. I recommend serving it as a savory snack or as an appetizer.

Preheat oven to 350° F. Spray 8u0022x4u0022 loaf pan with non-stick cooking spray. Add all dry ingredients and spices to a large mixing bowl. Stir to combine.
Add beer and oil to dry ingredients. Mix until combined, gradually adding more beer if necessary.
Transfer into loaf pan and garnish with pepitas. Bake for 50 minutes or until a toothpick comes out clean.
