This Eggplant-Chipotle Pizza Will Change Up Your Weekly Pizza Night

At least half of the people I have talked to since the pandemic started have experimented with homemade pizza in the past couple months. Personally, I have experimented with making different types of pizza crusts, including cauliflower, quinoa, regular crust, and others. But a few months into my pizza-making endeavors when I was running out of unique toppings (corn is a personal favorite), my brother suggested an eggplant-chipotle pizza with eggs on top. At first, I was totally and completely opposed to eggs on pizza, but eventually I came around and tried the recipe and it was admittedly way better than I expected. So, if you’re looking to change up your weekly pizza routine, try the following recipe and maybe you’ll also be converted to an egg-on-pizza lover.

Eggplant-Chipotle Pizza with Eggs

    1. Make the pizza dough the night before. Any recipe works here, but this one from AllRecipes has excellent reviews. And if you’re not in the mood to make the dough yourself, the ready-made kind at Trader Joe’s works well!

    2. Slice about 1/4 of the the eggplant into 1/4-1/2in rounds and place in colander over a large bowl. Sprinkle with salt and allow to drain for about 10 minutes. Meanwhile, preheat the oven to 425F. 

    3. Wash eggplant slices and pat dry. 

    4. Pan fry eggplant in a little bit of olive oil (or a lot if you love olive oil!) until it is golden brown and cooked through. Set aside. 

    5. Roll out pizza dough as indicated in dough recipe. Brush with a dash of olive oil before adding toppings. Include the peppers from the chipotle can, if desired. 

    6. Evenly sprinkle the desired amount of mozzarella and parmesan over the chipotle. 

    7. Place the eggplant slices on top of the cheese. 

    8. Brush the edges of the pizza with some olive oil and put in the oven. Bake for about 10 minutes, or until the edges start to brown but the pizza is not fully cooked yet. 

    9. Take pizza out and crack the eggs on top. You might have to do some maneuvering here to make sure they don’t run off the top of the pizza. Top the eggs with the sliced scallions and some salt and pepper. 

    10. Bake pizza for an additional 5-7 minutes, until the eggs are cooked but the yolks are still runny. 

    11. Remove from the oven, slice, and enjoy! 

    Note: if you really don’t like eggs, feel free to leave them out! It still tastes great without them.
