This article is written by a student writer from the Spoon University at ECU chapter.

1. “Pick a Protein” Bowl

A simple, versatile quinoa bowl that includes four wholesome ingredients that provide a base for shrimp, chicken or fish any day of the week.

What you will need:

– Organic kale

– Green Beans (blanched)

– Plain Quinoa

– Shredded Carrots

Tip: Wash all vegetables with cool water.

Top your quinoa with all three vegetables and squeeze fresh lemon juice over the bowl. Switch it up everyday with a protein of your choice. Quick, simple and nutritious!
