College Friendly Dips to Make in the Microwave

Betty Crocker Buffalo Chicken Dip

Ingredients

· 1 cup chunky blue cheese dressing

· 2 to 3 tablespoons Frank’s™ RedHot™ Buffalo Wings Sauce

· 2 cans (10 oz each) chunk chicken, drained, chopped

· 2 packages (8 oz each) cream cheese, softened

· 2 medium stalks celery, finely chopped (1 cup)

· 1 bag (8 oz) Gardetto’s® Special Request roasted garlic rye chips, as desired

Steps

· In a large microwavable bowl, mix dressing, sauce, chicken and cream cheese. Cover; microwave on High 2 to 3 minutes or until hot. Stir in celery.

· Spoon dip into a serving dish. Serve with chips.

Creamy Taco Dip with Beans

Ingredients

· 8 oz. Philadelphia cream cheese

· 1 can. refried beans

· 16 oz. shredded taco cheese

· 1 16oz. salsa

· sour cream

· scoop chips

Steps

· take a square glass dish 8X8 add cream cheese, spread all over bottom,

· add beans and spread all over cream cheese.

· add salsa 1/2 jar on top of beans add cheese to top

· cover with saran wrap and microwave for 9 min. (until all is melted)

· take out and let cool

· add chips and sour cream. (just dip it )

Queso Blanco Dip

Ingredients

· 1/2 pound White American Cheese roughly chopped into 1″ pieces

· 2 tablespoons chopped green chiles frozen or canned will work fine

· 1 tablespoon pickled jalapeno slices diced fine

· 1 tablespoon juice from the pickled jalapenos

· 1/3 cup milk

· 1/4 cup water

· dash of cumin

Steps

· Combine all ingredients in a medium size glass bowl

· Microwave for five minutes, pausing to stir after every minute. (The dip will be very watery at first, but it will thicken as it finishes cooking)

· Serve hot, with chips or poured over just about anything that you want to make more delicious. Enjoy!

Spinach Cheese Dip

Ingredients

· 12 oz. frozen chopped spinach or 1 lb fresh spinach cooked see recipe notes

· 1 tablespoon fresh or bottled lemon juice

· 1 – 8 oz can of sliced water chestnuts drained and chopped (optional, but highly recommended)

· 8 oz cream cheese

· 1/2 cup milk half and half or cream (not skim)

· 2 cups or 1/2 lb. grated mozzarella

· garlic salt to taste

· few drops of Tabasco

Steps

· Microwave spinach for 2 minutes, covered. (This may be done in the bag or box if it is microwave safe. Make sure to open the box or pierce the bag a few times to prevent bursting of the container.)

· Let cool for a minute or two.

· Squeeze spinach over the sink or a bowl in a few handfuls, until most of the liquid is extracted.

· Place spinach in a bowl once drained of liquid.

· In a medium size bowl, microwave lemon juice, water chestnuts, milk, and cream cheese for 1 minute, covered. Remove from microwave and whisk.

· Add spinach, mozzarella, garlic salt, and a few drops of Tabasco to the cream cheese mixture.

· Fold together until all ingredients are blended.

· Cover bowl and microwave for 1 minute.

· Stir, then microwave for 1 minute 30 seconds. All ingredients should be melted together and hot.

· Remove from microwave, place in serving bowl if desired and serve immediately with chips.

Smores Dip

Ingredients

· 2 Tablespoons chocolate chips (or any chopped up chocolate)

· 2 marshmallows

· 2 graham crackers

· Smoked salt (optional)

Steps

· Place the chocolate in a small ramekin, sprinkle with a small pinch of smoked salt (if using) and microwave for 30 seconds.

· Split the marshmallows in half and place on top of the chocolate, then microwave for 10-15 more seconds. Watch closely, take out of the microwave as soon as they start to puff up.

· Break the graham crackers into pieces and dip into the chocolate/marshmallow dip. Best if eaten right away.
