Dark Chocolate, Strawberry, And Brie Grilled Cheese

This week is all about cheese, so can we just take a second together to talk about it? What about cheese with chocolate? And strawberries? We say HELL YES. And so should you. This roasted strawberry, dark chocolate and brie grilled cheese sandwich is a sweet upgrade to its more savory counterpart. Call this lunch or dessert (or call us crazy). We won’t judge.

Servings: 2 sandwiches

Ingredients:
4 thick-cut slices of bread (multigrain or whole wheat recommended)
6 strawberries, hulled and halved
1/2 teaspoon coconut oil or balsamic vinegar
2-3 ounces brie cheese, sliced
1-2 ounces dark chocolate
1-2 teaspoons butter

Directions:
1. Preheat oven to 375ºF. Toss strawberries in coconut oil or balsamic vinegar. Roast the strawberries 15-20 minutes, or until they begin oozing juices.
2. Lightly butter the slices of bread. On two slices, layer some brie cheese, dark chocolate and strawberries. Top the strawberries with the remaining brie cheese and close the sandwich with the plan bread slices.
3. Cook the sandwiches on a skillet over medium-low heat, or melt them in a panini press. If you’re using a skillet: cook the sandwiches 2-3 minutes on one side, then flip them and cook them on the other side until golden-brown. Serve immediately.
