5 Ingredient Sofritas Recipe Better Than Chipotle’s

This article is written by a student writer from the Spoon University at Cal Poly chapter.

As an occasional vegetarian— emphasis on the occasional— I love that Chipotle serves a meat substitute as delicious as sofritas! Sofrtias give any burrito or taco that meaty texture, smokey flavor, and hearty richness that you seek in any filling meal. With this recipe, I think I cracked the code for how to replicate sofritas at home, with only 5 ingredients.

The secret to Chipotle’s sofritas is braised tofu, cooked in their special spice blend. If you look up a sofritas recipe online, you’ll see that most are fairly complicated and take much longer to cook. They require numerous ingredients like chipotles in adobo or poblano peppers, that aren’t as common around the household.

To replicate these spices and flavor profiles, I decided to use soyrizo as the base for my sofritas recipe. Soyrizo gives that smokey and spicy flavor that you find in adobo, and it takes little to no time to cook. I combined soyrizo with finely diced firm tofu, which gives you that chunky textural component that you find with Chipotle’s sofritas. Lastly, this recipe is finished off with caramelized shallots to add a hint of sweetness, as well as cilantro and garlic to zest it up! This version of sofritas is super easy and quick to make— perfect for any college student with limited time. I recommend testing this recipe out for your next Taco Tuesday and sharing it with a group of friends, because the recipe makes a big yield.

#Spoon Tip: I added my sofritas to tacos using corn tortillas, homemade guacamole, shredded cheese, lettuce, and tomatoes!
