It’s the most wonderful time of the year and I hope you are ready to enjoy every aspect of it, including baking. These gluten and sugar-free Christmas muffins will help you get in the holiday spirit faster.
Christmas has evolved from being a Christian holiday that honors the birth of Jesus Christ to a combined religious and secular celebration recognized worldwide that welcomes people from many cultural backgrounds to come together and share a loving, peaceful time.
No celebration is complete without a feast, and Christmas is one of the best of the year. Gingerbread houses, roasted ham, candy canes, peppermint ice cream, eggnog, all kind of pies and some hot butter rum are some seasonal musts. But what if we update our classic recipes and give them a healthier twist?
Gluten and Sugar Free Almond Christmas Muffins

Make sure to use measuring cups to get the perfect consistency and texture. Soak dates in water for 10-15 minutes prior to starting and turn on the oven until 350°F.
Mix all the ingredients together in a blender except for the almonds. Once all of the other ingredients are mixed, toss in the shredded almonds and press the pulse button 2 times. This way you will find crunchy pieces of almond in your muffins.
Set the paper muffin cases in a muffin tray—no need to add any butter or oil—and fill the muffin case two-thirds full.
Bake for 20-25 minutes in pre heated oven at 350°. Check if they are ready by poking one of the muffins with a fork or any kind of thin stick (like a toothpick). If it comes out clean, they are ready to see the light!
Let them cool off for about 10 minutes in the tray. Take them out and start decorating. You can spread a little butter on top of muffins and then sprinkle some coconut flakes or you can add maple syrup instead of butter to get the same sticky results (although that contains sugar).
Add your favorite cupcake toppers and enjoy!

This recipe can also be labeled as paleo because it contains no grains, legumes, dairy or processed ingredients. You can store the muffins in the fridge up to 5 days, but make sure to wait a bit before eating them after removing from the fridge so the cold doesn’t change the flavor.
