Pear and Gorgonzola Risotto

    Peel and cut the pear into small cubes. Dice the onion.

  2. BaoTran Lim

    Add oil to the pan and fry the onions until they have softened.

    Add the rice to the pan. Keep mixing it about until the rice is translucent.

    Turn the heat down to low and slowly add the vegetable stock a little bit at a time. When the rice has absorbed the broth poured in, gradually add a little more until all of the stock has been absorbed by the rice.

    When the rice is almost cooked, add in the cubed pears and any remaining broth and let it cook. Add salt and pepper to taste.

    Once the rice is cooked and has absorbed all the broth, crumble the gorgonzola on top and mix it in.
