Deep Fried Chocolate-Covered Strawberries

Skewer the strawberries and lay on a baking sheet lined with parchment paper. Place in the freezer for 15 minutes.
Microwave the semisweet chocolate in increments of 15 seconds, stirring after each interval until the chocolate is fully melted.
Carefully dip the strawberries into the melted chocolate and return to the parchment paper. Place them back in the freezer for 15 minutes.
Drizzle 4-6 inches of oil in a pot and let it heat up to 330°F (amount may vary depending on pot being used).
While waiting for oil to heat up, mix together pancake mix. If the batter is too thin, add more dry mix.
Dip the hardened chocolate-covered strawberries into the pancake batter, creating a thick coat.
Carefully place them into the oil for about 1 minute or until golden brown. Remove using tongs and lay on a plate covered in paper towels.
Let cool and enjoy!
