Oatmeal is a great breakfast option because it has fiber to keep you satisfied for hours and because it’s so customizable. It’ll give you the fuel you need to start your day off right. This vegan baked oatmeal  with apple and peanut butter drizzle creates a blend of flavors that tastes more like dessert than breakfast. The peanut butter sauce melts with the apples to make a symphony of flavor.

    Make flax or chia eggs by adding 6 tablespoons of water to 2 tablespoons of seeds in a small bowl. Let sit until thickened.

    In a large bowl, mix together oats, baking powder, cinnamon, and nutmeg.

    In a separate bowl, mash up the banana. Add in dairy-free milk and seed eggs. Mix together.

    Add the wet ingredients into the dry ingredients and mix until combined.

    Make peanut butter sauce by melting coconut oil in the microwave. Add in peanut butter and stir until smooth.

    In a 9×9-inch baking pan, pour in about ⅓ of the oat mixture. Place a layer of diced apples on top.

    Drizzle apples with 1/3 of the peanut butter sauce.

    Repeat steps 6-7.

    Add remaining 1/3 of the oat mixture and cover with peanut butter sauce. Sprinkle with slivered almonds, if desired.

    Bake at 375°F for 20 minutes. Let cool.
