Peanut butter flavored desserts are some of my favorite types of treats. That being said, sometimes I find that the peanut butter flavor is covered way too much in chocolate or has a really crunchy consistency. I decided to make vegan peanut butter cookies with chocolate chips to make sure that they stay chewy and true to the peanut butter flavor.

Preheat the oven to 350°F and add peanut butter, maple syrup, honey, and vanilla to a large bowl. Mix well with a spatula.
Add in the flour in two parts and slowly fold in with a spatula. Add the chocolate chips in and mix.
Spoon the dough onto a cookie sheet and shape them to be sort of round and flat. Sprinkle some sugar on top of each cookie (optional) and bake for 8-10 minutes.
As a pretty experienced baker, I tend to enjoy vegan cookies more so than non-vegan cookies. These vegan peanut butter cookies are no exception. Without eggs, milk, and butter, there are no ingredients distracting from the peanut butter. The cookies are more chewy and moist because they don’t have to bake for very long either.
There is a lot of flavor to these cookies, and the maple syrup and honey bring out the dessert sweetness without using processed or unnatural sugar. I also love the Enjoy Life vegan chocolate chips in this recipe because there are only a few to cut that totally peanut butter taste.
Not to mention this makes the cookies a lot healthier and easier with a few simple ingredients. A mixer isn’t even required for this recipe because the super easy dough can be completely mixed by hand.
