Dark Chocolate Cake With A Classy Kick Of Red Wine

This article is written by a student writer from the Spoon University at UC Berkeley chapter.

What better way to celebrate the end of a semester than with chocolate cake? Chocolate cake comes in numerous forms, including flourless cakes to poke cakes to mug cakes. This red wine chocolate cake is perfect for those who want to deviate from the normal cakes, love desserts, or are wine and chocolate lovers.

This chocolate cake takes it up another notch with the infusion of red wine, making a childhood favorite into a classy, adult-like dessert. Putting red wine in both the cake and glaze not only cuts the sweetness of the cake but also brings a slight bitter edge.

Instructions

  1. Danielle Chen

Pre-heat oven to 370°F. Assemble all of the ingredients.

  2. Danielle Chen

Whisk together 1/3 cup avocado oil and brown sugar.

  3. Danielle Chen

Add in eggs to oil and sugar mixture.

  4. Danielle Chen

Whisk until eggs, oil, and sugar are light yellow and foamy.

  5. Danielle Chen

Add in cocoa powder and a portion of flour.

  6. Danielle Chen

Mix and add in a portion of 1/2 cup of red wine.

  7. Danielle Chen

Mix and repeat alternating between red wine and dry ingredients (flour and cocoa powder). Continue mixing until all of the cake ingredients are gone.

  8. Danielle Chen

Pour batter into a pre-greased pan.

  9. Danielle Chen

Bake for 20-25 minutes. To test if the cake is ready, when you stick a knife or toothpick into the cake the knife/toothpick should come out clean/minimal crumbs. Once the cake is ready, take it out and let it cool.

  10. Danielle Chen

While the cake is baking, start on the glaze. Place remaining ingredients (2 tbsp avocado oil, 1/2 cup wine, dark chocolate) in a pan over medium low heat until everything is melted.

  11. Danielle Chen

Pour into a bowl and let the glaze cool until it reaches room temperature.

#SpoonTip: For a sweeter glaze, add in sweetener (honey, sugar, agave, etc) until desired sweetness is reached.

  12. Danielle Chen

Pour onto the cake. Garnish however you want and enjoy!

I am an avid foodie who is always down to try new things! I have been baking since I was seven years old. I love munching on bread and pastries (even though I am mildly allergic to gluten). My favorite pastime other than sleeping, cooking and working out, is chowing down plates upon plates of brisket and bulgogi with friends at all-you-can-eat KBBQ.
