Chocolate Chip Banana Bread Muffins

My apartment always has as surplus of bananas, which means we’re always trying to figure out what to do with our overripe bananas. Our favorite thing to make is chocolate chip banana bread. Banana bread is healthy enough to eat for breakfast, but the added chocolate chips make this quick bread a great dessert too.

Instead of making a loaf of banana bread, I opt for chocolate chip banana bread muffins because they’re easy to grab and eat on the way to class or carry around for a snack later in the day.

Chocolate Chip Banana Bread Muffins

  1. Preheat oven to 350°F.

  2. Melt unsalted butter and let cool.

  3. Add brown sugar, melted butter, milk, and vanilla extract into large mixing bowl. Mix until combined.

  4. Add flour, baking soda, baking powder, and salt to bowl. Mix until combined.

  5. Peel and mash riped bananas. Add banana mash to mixture.

  6. Stir in chocolate chips.

  7. Use a spoon or ice cream scoop to add batter into buttered muffin tin. Fill 3/4 or all the way full.

  8. Bake for 22-25 minutes, or until toothpick comes out clean.
