It’s the sweetest combination of flavors and textures, a decadent mix of fruit and chocolate, finished with a perfectly crunchy Oreo crust.
It might seem like you have a lot of work ahead of you, considering that you need to make mini Oreo crusts, a cheesecake batter, and a raspberry sauce (oh my!). But each step will take you only 20 minutes or less, and you’ll be stuffing your face with these baby cakes in no time
White Chocolate Raspberry Cheesecake Bites

Preheat oven to 325°F.
Line a mini muffin tin with liners.
Mix crushed Oreos and melted butter together, then press Oreo crust mixture into the muffin liners.
Make the raspberry sauce: dissolve the cornstarch into water. Heat the mixture in a saucepan with the raspberries and sugar, and stir until thick. Remove from stove.
Melt white chocolate chips into half and half, stirring often.
Make the cheesecake batter: mix softened cream cheese and sugar. Add eggs one at a time, then mix in the white chocolate mixture from step 5 and the vanilla.
Spoon 1 tbsp of cheesecake batter onto each crust. Add 1/2 tsp of raspberry sauce. Swirl mixture gently with a toothpick.
Bake for 20 minutes, or until cheesecake tops become puffy. Cool to room temperature and serve!
