It’s guaranteed to help meet some (if not all) your five-a-day needs without the time and effort college students just don’t have between classes, orgs, and friends. It’s dorm kitchen-friendly as well, only requiring a knife, bowl, and cutting board to get some flavorful, Insta-worthy salsa.

    Combine the rinsed beans, sweet corn, chopped cilantro, and diced onions into a bowl.

    Once the ingredients have been mixed, add the olive oil, vinegar, lime juice, and garlic until thoroughly coated throughout the veggies. Add the dry spices (smoked paprika, black pepper, and salt) to the mixture after. This will ensure that the ingredients will stick evenly throughout your bean salsa!

    Once everything is thoroughly combined, add in the diced tomatoes. Tomatoes are added last because they can easily become soft and bruised, which can cause them to release more juice than desirable.

    Enjoy as a side dish, main course, or-like in the pictures above and below- little lettuce boats with sautéed mushrooms and ground beef or vegetarian tacos!
