I think there’s a common misconception that you have to be an aspiring Julia Child to bake muffins from scratch, but it’s actually ridiculously easy. Pour, mix and bake: simple as that. Ingredients:
2 cups whole wheat flour
5 cups rolled oats
1 ¾ cups light brown sugar
2/3 cup ground flaxseed
4 teaspoons baking soda
1 teaspoon baking powder
4 teaspoons ground cinnamon
2 eggs
1 cup vegetable oil
2 cups buttermilk
2 cups blueberries
Directions:
1. Preheat oven to 350°F.
2. In a large bowl, combine flour, oats, sugar, flaxseed, baking soda, baking powder and cinnamon.
3. Add eggs, oil, buttermilk and 1 cup water. Gently stir in blueberries.
4. Place paper liners in muffin pan. Spoon batter into the muffin cups and fill to the top.
5. Bake for 20 minutes or until the center is cooked.
6. Let cool for a few minutes before eating.
