  1. Preheat the oven to 350°F and prep muffin tin with 15 cupcake liners.

    Using a cheese grater or food processor, grate sweet potatoes.

    Combine the grated sweet potatoes and onion into a bowl. Use cheese cloth or paper towel to ring out excess moisture.
