  1. Pasta.KEL

    Bring 4 cups of water to a boil. Place 1 box of your favorite pasta in the water and reduce the heat. Drain the noodles in a strainer. My favorite is farfalle or penne!

    Peel only the outside skin of 2 carrots, and discard. Continue to peel the entirety of the carrots into your dish. These strands may be long, so feel free to cut them in half with a sharp knife.

    Peel one cucumber of its skin, then slice it into wheels. Continue to cut each wheel into quarters.

    Slice each of the tomatoes in half.

    Dice the bell pepper into pieces, no bigger than your thumb.

    Combine vegetables and mix in the salt, pepper, olive oil, and pesto. Drain pasta and serve with dressed veggies and shredded cheese, if desired.
