Ratatouille sounds fancy and hard to make, right? Not to worry, it really isn’t. Just because something is French doesn’t mean it has to be fancy (and this is coming from a French guy).
If you want to make ratatouille, all you need is one eggplant, one zucchini, two tomatoes, and one onion. If you thought it couldn’t get any better, it should cost you less than $5 for all your ingredients. If it doesn’t, you’re shopping in the wrong place. Impress your friends with this recipe, or just keep it all to yourself.

Chop up your vegetables (the thinner the better).
Dump everything in a pan with olive oil. Add salt and pepper (and thyme if you have it — or Herbes de Provence if you really want to show off).
Simmer for 20-25 minutes.
When the zucchini is translucent, it’s done! Serve and enjoy.
