You’ll Never Look at Pita the Same After Making These Falafel Waffles

Frying anything is great, and frying chickpeas is at the top of the list. To a veggie-head there isn’t anything better than a solid falafel sandwich. But no matter the quality of a falafel sandwich, I never seem to be able to get the veggies, sauce and falafel that I want all in one bite. Enter falafel waffles. 

They are the solution to this sandwich conundrum that plagues veggies and non-veggies alike. Do away with the old school balled up chickpea mash. Rather grab your waffle maker, spoon that mash in, and witness the magic happen.

By increasing the surface area of each falafel, you’re able to get the chickpea goodness and all the fixins in each bite. It’s so simple, yet so genius. 

There are a lot of nontraditional waffle iron recipes out there, but none hold quite the same value as this crazy falafel waffle sandwich.

    Combine drained chickpeas, egg whites, cilantro, olive oil and garlic.

    Spice it up! Add baking powder, cumin, salt, coriander and cayenne pepper. Pulse in blender or food processor until combined yet still a bit chunky.

    Brush olive oil onto iron and add in mixture.

    Cook for approximately 10 minutes or until golden brown.

    Chop all your veggies into small chunks.

    Stuff your pitas with all your veggie goodness. Don’t forget sauces like tahini, tzatziki and hummus.
