Empanadas are great. They’re like delightful little pillows of flakey dough, filled with all of your favorite fillings, typically meats. We threw some America on this Latin dish and filled these flakey pillows of heaven with mac n’ cheese and it was AWESOME.
Get Your Carb Fix With These Mac n’ Cheese Empanadas
Ingredients
Instructions
Combine flour, baking powder and salt. Whisk.
Grate one stick of cold butter.
Add grated butter to dry mix and stir.
Add cold water to dough and mix until dough forms. Chill for 1 hour.
Cook one box of mac n’ cheese as instructed.
Roll out the chilled dough.
Using the rim of a cup, cut small circles into the dough.
Scoop about one tablespoon of cooked mac n’ cheese onto each round.
Line each round with an egg wash and fold each round over. Bake at 400ºF for 15 minutes.
Take out, throw on some Netflix and kick back. It’s cheesing time
