Your name doesn’t have to be Ben or Jerry to whip up this Snickers ice cream concoction that’s out of this world. I won’t lie and say that making homemade caramel or nougat is easier than buying it from the store, but I will assure you it tastes unbelievably better.
My best advice when tackling this ice cream recipe is to invest in a candy thermometer. Candy-making resembles more of a science experiment than baking or cooking. It’s not absolutely necessary but it would be in your best interest to use one to avoid burning your sugar mixtures.
Homemade Snickers Ice Cream

Stir together the sugar, corn syrup, and water in a medium saucepan. Bring to a boil over medium heat and continue to let boil for about six minutes.
Whip the egg whites on low speed until frothy, about one minute. Slowly pour syrup into the egg whites, continuing to whisk as you add the rest of the hot sugar syrup. Increase the mixer speed to medium and whip until the nougat reaches a full, frothy foam. This should take about two minutes.
Heat 1/2 cup sugar and two tablespoons of water. Cook on high heat until sugar melts, caramelizes, and turns a dark amber color.
Quickly stir in butter, salt and cream.
Microwave one cup of peanut butter and stir into vanilla ice cream. Put it back into freezer.
Chop chocolate into shavings and chunks.
Bask in your homemade toppings glory.
Layer on ice cream and nougat.
Layer on toppings in whatever order floats your boat.
