I hope words “chicken salad” didn’t deter you away from this recipe. We’re not talking the mayo-filled salad your grandma serves on white bread for lunch. In fact, there’s no mayo to be found in this dish. Instead, it’s layered with crunch, sweetness, and spice. Any mango chutney will do for this recipe, but no surprise that we favor the mango-ginger chutney from Trader Joe’s. This is the perfect salad to pack up into a container and enjoy at an outdoor concert with spoonfuls of couscous.

    Mix curry powder, chutney, mayo, and salt in a small bowl until combined.

    Place chopped chicken, cheese, apples, and nuts in a large bowl.

  4. Chill for 1 hour.
