If you count your nutrients instead of your calories this is the perfect recipe for you. The unbelievably creamy texture of this type of tuber blows others out of the park, including its famous orange-fleshed cousin most Americans recognize as a sweet potato.
Antioxidants are their most notable quality and like blueberries their anthocyanin levels are a product of their deep pigmentation. If you don’t see them labeled as purple sweet potatoes in a grocery store they can sometimes be found as Okinawan sweet potatoes. These fries are the perfect accompaniment to any plant-based, whole food meal.
