The Best Rhubarb Crumble Crepe Recipe Even You Can Make

You don’t have to travel far to get heavenly sweet and savory crepes. In fact, you can find them right in Evanston at Gotta B Crepes.

Gotta B Crepes is a local business dedicated to serving crepes made from locally sourced ingredients owned by husband and wife, Ryan and Kathia Jones, originally started on their very own front porch. Now the business has expanded to cooking crepes at farmers’ markets over the Chicago area and has a pop-up shop location serving fresh crepes only a short bike ride from campus at 1601 Simpson Street.

This Friday, May 20th from 11-4, Spoon NU is hosting SpoonFest, an outdoor market featuring local food vendors just like Gotta B Crepes. Gotta B Crepes will be serving up made-to-order, classic, and seasonal savory and sweet crepes. The seasonal sweet crepe featured this Friday is a Rhubarb Crumble Crepe with rhubarb filling and topped with crispy pie crumbs.

But if you can’t make to SpoonFest (seriously you’ll be missing out) to try one of Gotta B Crepes’ specials, all hope is not lost. Gotta B chef Ryan Jones simplified his recipe for Rhubarb Crumble Crepes so college students just like you can make them at home. All it takes is a blender and the right ingredients for you to be able to make crepes “the way it’s gotta be.”

Gotta B Crepes Blender Batter

Difficulty:BeginnerPrep time: 5 minutesCook time: 10 minutesTotal time: 15 minutesServings: servings

  1. Mix eggs in blender till double in volume.

  2. Add in flour 1/4 cup at a time and blend.

  3. Add in milk 1/4 cup at a time until all is incorporated blending to ensure everything is mixing well.

  4. Add in sugar, honey and vanilla and blend.

  5. Add in melted butter and salt and blend one last time.

  6. Pour 2oz of batter into a pan and cook until light brown and then flip.

Rhubarb Filling

  1. Mix all ingredients in a pot with a lid.

  2. Cook over medium flame in pot with lid on for 15 minutes. Don’t stir or lift the lid.

  3. Let filling cool with the lid off and transfer to containers.

Pie Crumb Topping

  1. Preheat oven to 350.

  2. Mix flour, sugar, cinnamon and butter in a food processor until well incorporated.

  3. Add oatmeal and mix well.

  4. Place on an un-greased sheet pan and bake for 8-10 minutes.

  5. Let cool for 2 minutes and then break into pieces.
