BBQ Chicken Pineapple Grilled Cheese

    Preheat oven to 350°F degrees and carefully line chicken breasts onto a greased baking sheet.

  2. Pour 1/2 cup of BBQ sauce over the chicken breasts and fully cover them. Use a plastic spatula to baste the breasts to cover them fully.

    Bake for 20-30 minutes, or until the breasts are fully cooked.

    Shred the cooked chicken into a large bowl with two forks. Then mix the shredded chicken with the other 1/2 cup of BBQ sauce.

     

     

  5. Slice open your pineapple and cut out all of the fruit, careful to avoid the core and the outside of the pineapple. Slice the pineapple chunks into thin, bite-sized slices.

    Add the sliced pineapple into the large bowl of chicken and BBQ sauce. Stir until fully combined.

  7. Grease a skillet with cooking spray.

    Butter a slice of bread on one side and place it butter-side down onto a skillet.

    Sprinkle shredded cheese over the entire bread slice, distributing it evenly so there are no naked spots.

    Add chicken-pineapple filling ontop of the bread and cheese. Again, distributing it evenly so there is plenty of chicken to cover cheese.

  11. Top the chicken with more cheese, distributing it evenly.

    Butter another piece of bread and place it butter-side up on top of the chicken and cheese, making a sandwich. Repeat steps 8 through 12 for each grilled cheese sandwich.

    Grill each side of the sandwiches until they turn golden brown, or for 5 to 6 minutes each side.
