These Funfetti Pancakes Let You Eat Cake for Breakfast

This article is written by a student writer from the Spoon University at Northwestern chapter.

Sometimes I wake up in the morning and really just want a slice of cake. So what? Who cares?

This recipe basically allows you to do just that – without the quizzical looks from your friends or the chastisement from your health-conscious mother. The cake mix actually creates a fluffier result than another pancake recipe and coconut oil is a healthier alternative to other cooking oils.

So celebrate your birthday (aka every Sunday morning) with these delicious pancakes that are too easy not to make.
