How to Make New Mexican Green Chile Chicken Enchiladas

Enchiladas are a staple in New Mexico and it’s every New Mexican’s duty to know how to make them. Follow this easy recipe on how to make your own green chile chicken enchiladas to earn yourself a tasty meal and a whole lot of confidence.

Green Chile Chicken Enchiladas

    Gather the green chile, tomatoes, chicken, cream of chicken, and broth.

    Place all the ingredients in a large pot and bring to a boil.

    While the pot is cooking, place a small amount of oil in a pan and fry the corn tortillas until golden brown.

    Once the pot has been brought to a boil, get a casserole dish and begin the layering process.

    Place the soup on the bottom of the dish, then add a layer of tortillas, and lastly a layer of cheese. Repeat until dish is filled and top with lots and lots of cheese.

    Preheat oven to 350ºF and bake for 30 minutes.

    Serve with sour cream and Spanish rice and don’t forget to enjoy!
