How to Make a Refreshing Mango-Kale Salad

Sure, the last thing you want to eat right now is salad. Scratch that – the last thing you want to eat right now is kale salad. But, bikini season is right around the corner, so you might as well try to enjoy eating healthy… *sigh.*

And we promise, this Massaged Mango-Kale Salad won’t be THAT bad. In fact, we think it’s pretty damn good. And hey, if you don’t like it, you’ll probably still get a good Instagram post out of it, and that’s what really matters, right?

Mango and Kale Salad

    Remove the stalks from the kale and thinly slice the leaves.

    Add kale, half of the lemon juice, a drizzle of olive oil, and a little Kosher salt to a large serving bowl. Massage until the kale starts to soften (around 2-3 minutes).

    Prepare the dressing by whisking the remaining lemon juice with honey and ground black pepper, then gradually stirring in 1/4 cup of olive oil.

    Pour dressing over kale, then add diced mango and pepitas. Mix and serve.
