How to Make Salmon Poke Avocado Bowls

What could be better than garlic shrimp, avocados, and salmon? That’s right, nothing. This quick and easy recipe requires little to time at all and results in gorgeous looking appetizers for any special occasion. The creamy avocados mixed with fresh salmon sashimi, rich garlic shrimp, and crunchy sesame seeds create the most heavenly flavors. Double the recipe and serve in a bowl for a full meal.

Avocado, Shrimp, and Salmon Poke

    Peel, de-vein, and wash shrimp. Cook rice.

    Mince garlic and cilantro. Chop scallions.

    Cut avocado in half, scoop out the meat, and dice. Set aside both shell halves.

    #SpoonTip: Leave a thin layer of avocado to hold up shell better.

    Dice salmon.

    Add olive oil, shrimp, and garlic to a pan. Sprinkle a pinch of salt. Cook on medium heat until shrimp are just barely pink, about 4-5 minutes.

    Dice shrimp. Place cooked shrimp and garlic into a bowl with the diced avocado. Add a pinch of pepper and minced cilantro. Mix it all up.

    Mix diced salmon with soy sauce and sesame oil. Sprinkle sesame seeds on top.

    Fill the bottom half of shells with rice.

    Spoon avocado mixture into half of one shell, and fill the rest with salmon poke. Garnish with sesame seeds, cilantro, and scallions.
