Say aloha to the poke bowl, the latest food craze to sweep the nation. These gorgeous bowls hail from the beaches of Hawaii and are quickly gaining popularity on the mainland (just take a glance at Instagram for proof).
At its simplest, poke (pronounced poh-kay) consists of cubed, raw fish that’s marinated in a soy-based sauce and topped with thinly-sliced onion and sesame seeds. This mixture can be enjoyed as is, or combined with rice and toppings to create a deconstructed sushi roll of sorts.

Add rice vinegar, sugar, and salt to cooked rice. Set aside.

Add soy sauce and sesame oil to fish. Stir to combine and let marinate in the fridge for 5 minutes.
Place rice in the bottom of your bowl. Add marinated fish and desired toppings.
Enjoy immediately.
