How to Make Insta-Worthy Rainbow Bagels with Funfetti Cream Cheese

If you’ve scrolled through Instagram in past few weeks, chances are you’ve come across a photo of The Bagel Store‘s #foodporn-ready rainbow bagels.

While these bagels have only just recently broken the Internet, the Brooklyn-based bakery has apparently been making them for 20 years, and it’s honestly a shame we’ve only now become privy to this beautiful creation.

Perhaps wishing to make up for lost time, New Yorkers and tourists have been swarming to Brooklyn’s Williamsburg to get a taste of these bagels that come stuffed with insane dessert-flavored cream cheeses and look like those tie-dye shirts you used to make at summer camp.

But for those of us who aren’t able to make it to NYC or just aren’t up for waiting in line for an hour, here’s a homemade rainbow bagel and Funfetti cream cheese recipe guaranteed to rack up those Insta likes.

Funfetti Cream Cheese

    Mix all ingredients together in a bowl.

Rainbow Bagels

    Add yeast to warm water and stir to dissolve. Set aside.

    Whisk together flour, brown sugar, and salt in a large bowl.

    Add water and yeast to dry mixture while stirring. Be careful to drizzle it in slowly.

    Use your hands to bring the dough together into a ball.

    Place dough onto a lightly floured surface and knead for 10 minutes.

    Place kneaded dough into a bowl that’s been lightly sprayed with nonstick spray. Cover with a dish towel and let rise for 1 1/2 hours.

    Split dough into 6 equal sections and add food coloring.

    Knead to distribute the color.

    Roll each color into a 12-inch log. Repeat for each color and stack as shown.

    Twist together, then break off 8-inch long pieces and shape into a circle. Place on a parchment paper-lined baking sheet.

    Repeat with remaining dough. Cover and let rest for 15 minutes.

    Preheat oven to 425°F. Prepare water bath by combing 2 quarts of water and honey in a large pot. Bring to a low boil.

    #SpoonTip: Spray your measuring cup with nonstick cooking spray before adding the honey. It’ll slide right out.

    Gently drop in bagels 2-3 at a time. Cook for 1 minute on each side, then remove and set on a wire rack to drain. Repeat for all bagels.

    Place boiled bagels on a parchment paper-lined baking sheet and brush with beaten egg.

    Bake for 20-25 minutes, or until lightly browned. Let cool, then slather with Funfetti cream cheese and enjoy.
