As a college student, time and money are always in short supply. This yummy 3-ingredient recipe is quick, inexpensive and healthy too — AKA the weeknight dinner trifecta.
 
					BBQ Chicken Sweet Potato

- Preheat oven to 450°F. 
 - Cut sweet potato lengthwise and place facedown on a greased or non-stick baking sheet. 
 - Place potato in the oven, and bake for 30-40 minutes or until tender. 
 - While potato is baking, cook and shred chicken breast. - When potato is almost done, pour your favorite BBQ sauce into a microwave safe bowl and microwave for 30 seconds. 
 - Combine BBQ sauce and shredded chicken. 
 - Wait until cool enough to handle, then scoop out centers of potato halves. - Spoon BBQ chicken mixture into potatoes. - #SpoonTip: Garnish with cilantro to make it look extra classy.
