Pumpkin Protein Pancakes

These pumpkin protein pancakes are the perfect fall treat to not only satisfy your desire for a warm, delicious breakfast but also to provide a boost of protein to power you through your morning. Fitting for a post-workout meal or just to get you through your AM classes, these pancakes are sure to become a go-to breakfast.

Servings: 1

Ingredients:
1 scoop vanilla protein powder
¼ cup puréed pumpkin
¼ cup egg whites (approximately 2 egg whites)
3 tablespoons oatmeal
1 packet sweetener (I use Stevia)
Cinnamon or pumpkin pie spice to taste

Directions:
1. Combine all ingredients in a mixing bowl, and stir together with a spoon or whisk until there are no lumps.

2. Heat a skillet coated with non-stick spray.
3. Pour batter into the skillet, cooking one pancake at a time until all of the batter is used up.

4. Top with maple syrup, nut butter or fruit.
