3-Ingredient Chocolate Frosted Pumpkin Cookies

This article is written by a student writer from the Spoon University at MSU chapter.

It’s that time of year when everyone feels merry and gay, and feel like getting in the holiday spirit the best way they know how — baking.

For some of us, we excel at cooking food. As for baking, well, that’s not our strong suit (even though we really REALLY wished otherwise). Enter store-bought cookie dough. Ah yes, our savior from the food Gods (Pillsbury, you rock).

While we can be plain-Jane, and simply just cut up the dough, roll it, and stick it in the oven, I’ve chosen a different route. I decided to dress up my holiday cookies with a healthy homemade frosting (ish-type) that’ll have you grabbing these cookies off the plate like Santa on Christmas Eve.

Want to know the best part about this recipe? It’s HEALTHY, it tastes good, and it’s super easy! These pumpkin cookies will satisfy your sweet tooth, your inner baker and your body. What could be better than that?
