Ingredients:
1/2 cup Rotini, or any kind of pasta you have on hand
1 1/2 tablespoons olive oil
1 clove garlic, minced
1 link chicken-apple sausage (or any kind you have on hand)
1 cup fresh kale
1-2 tablespoons goat cheese
Directions:
1. Put pasta in a pot of salted boiling water.
2. While the pasta is cooking, heat olive oil in a large pan on medium-high, and add garlic. After about a minute, add sliced sausage, and cook until lightly browned on all sides. Add kale, and cook until wilted.
3. When pasta is al-dente (follow directions on box, this is often about 8 minutes), drain it and add it to the pan with the garlic, sausage, and kale. Break the goat cheese into small bits and add to pan, stirring well. Add extra olive oil if stirring is difficult, and serve immediately when cheese starts to melt.
