During my trip to Tuscany, I discovered that Tiramisu, a seemingly complex dessert, is actually quite simple to make. With just six ingredients, it’s a breeze. My chef Simone, who led my cooking class, assured me that Tiramisu is far less intimidating than it appears, and he was right! Even my family, who are not experienced in the kitchen, managed to whip up a delicious Tiramisu in minutes, following our chef’s recipe with ease.
The recipe below will yield about four servings of Tiramisu, but according to Simone’s Nonna, the key to remember is “one-one-one.” One egg, one tablespoon of sugar, and one hundred grams of Marscapone cream are used for each person enjoying the Tiramisu. He also suggested adding dark chocolate chunks instead of cocoa powder to the Tiramisu, which gave the dessert a rich, beautiful crunch. Nonna’s helpful trick makes Tiramisu an easy dessert that can make your college dorm feel like Simone’s Tuscan villa.

Instructions
- Crack four eggs into two bowls, straining the egg whites into one and placing the yolk in another. The yolks and egg whites should be completely separate and in separate bowls.
- Whip the egg whites until thick and fluffy. You should be able to flip the bowl upside down, and it will not move!
- Add sugar to the egg yolks and mix until the yolks have a thick-custard texture.
- Fold the mascarpone into the egg yolks and sugar; add the egg whites when well mixed. This is the cream base of the Tiramisu.
- Pour coffee into a bowl and soak the crackers in it. The longer you dip the crackers in the coffee, the soggier they will be. Dip based on whether you like them crunchier or soggier.
- Spread the cream at the base of a dish, then place the coffee-soaked crackers on top. Add more cream on top of the crackers and continue to layer until the dish is full.
- If you’re a chocolate lover, sprinkle crumbled dark chocolate on top of the Tiramisu or between layers.
- Chill the Tiramisu as long as you prefer, and enjoy!

4 large eggs
4 tbsp of white sugar
400 grams (1 ⅔ cup) of Marscapone cream
1 crushed dark chocolate bar
1 cup of coffee
Pavesini Cookies (Or other Ladyfinger biscuits)
