Black Bean Taco Salad

It’s frustrating when a recipe calls for a specialized or complicated cooking tool that you just don’t have. With the limited time, energy and money students have to stock a college apartment, owning a food processor or box grater is usually not a high priority. Fortunately, you don’t need expensive cooking equipment or even a lot of time to make delicious meals. This hearty black bean taco salad is packed with flavor and can be made in under ten minutes with no cooking at all.

Servings: 2

Ingredients:
1/4 cup olive oil
3 tablespoons lime juice
1/2 teaspoon cumin
1 can black beans, drained and rinsed
3 ounces crumbled feta cheese
1 avocado, diced
1 red pepper, chopped
2 cups spinach leaves
Salt and pepper to taste

Directions:
1. Whisk olive oil, lime juice, cumin, salt and pepper in a small bowl to make the dressing.
2. Toss black beans, feta cheese, avocado and red pepper in a large bowl.
3. Drizzle dressing over salad ingredients and toss to coat.
4. Place 1-2 large scoops of black bean mixture onto a bed of spinach leaves.
