Purim is right around the corner and, as with most Jewish holidays, Purim has amazing traditional foods associated with it, aka hamantaschen!
Take these already amazing classics up a notch by adding chocolate chip cookie dough to the center. Say what? These are guaranteed to impress your whole family.

Servings: 30-60 cookies
Ingredients:
For the chocolate cookie exterior:
1 egg
1 egg white
3/4 cup sugar
1/4 cup plus 2 tablespoons canola oil
3 tablespoons almond milk
2 1/4 cup flour
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
For the chocolate chip cookie interior:
1 cup plus 2 tablespoons flour
1/4 teaspoon baking soda
1/2 cup butter (room temperature)
1/4 cup sugar
1/2 cup brown sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1 egg
1 cup chocolate chips
1. Beat the egg, egg white and sugar until combined with a fork. Add in oil and almond milk, combine until smooth.
2. In a small bowl mix together flour, baking powder and cocoa powder. Mix the dry ingredients in with the wet ingredients.
3. Form dough into ball, cover in plastic wrap and put in the fridge for at least an hour.
Meanwhile..
4. In a small bowl, combine flour and baking soda.
5. In a large bowl, beat butter, brown and white sugar until fluffy.
6. Add salt, vanilla and eggs, combine. Mix in the dry ingredients and the chocolate chips.
Once an hour has passed…
7. Preheat oven to 350ºF and line a baking sheet with parchment paper.
8. Take the chocolate dough out of the fridge and roll it to 1/4 inch thickness.
9. Using a circular device (cookie cutter, glass, etc.), cut circles out of the dough.
10. Top each circle with a teaspoon of the chocolate chip dough.
11. Fold up the sides of each circle and pinch up the tops around the chocolate chip dough.
12. Bake for about 10 minutes and allow to cool.
