When I read an article about a two ingredient pizza crust, I was really skeptical. I couldn’t believe that just two ingredients could make a crunchy, chewy and satisfying crust…especially since one of the ingredients is Greek yogurt. But since I had the ingredients around, I decided to try it out. Shockingly, this recipe not only works, but it is delicious. The crust even has that “yeasty” taste.
Recipe adapted from The Slow Roasted Italian
Prep Time: 15 minutes
Cook Time: 10-12 minutes
Total Time: 25 minutes
Servings: 5
Ingredients:
1 ½ cups Greek yogurt
1 ¾ cups self-rising flour*
*Instead of self-rising flour, I used 1 ¾ cups white whole wheat flour, 2 ¼ teaspoons baking powder and 1 teaspoon salt.
Directions:
1. Preheat oven to 450°F. Mix Greek yogurt and 1 ½ cups flour (and baking powder and salt if not using self-rising flour) in a bowl.
2. Knead on a well-floured surface, incorporating the remaining ¼ cup of flour, for about 5 minutes.
3. Form into desired shape and size on a non-stick cookie sheet.
4. Add your favorite toppings. I topped the pizza with tomato sauce, browned poultry sausage, fresh tomatoes, fresh mozzarella and basil.
5. Bake for 15-20 minutes or until crust is golden brown.
