After the long holiday break full of Christmas cookies and indulgent family meals, we’re all looking for ways to undo the damage. This simple and quick recipe can help you do just that. Instead of having a side of pasta at your next meal, try this alternative: zucchini linguini. The dish goes best served as an Italian-inspired meal, like grilled chicken parm or spaghetti and meatballs.

Cook Time: 7-10 minutes
Total Time: approximately 20 minutes

Servings: 2

Ingredients:

2 zucchinis
2 cloves garlic
2 tablespoon olive oil
Salt and pepper to taste

Directions:

1. Peel the zucchini.

2. Using a julienne peeler, create skinny strands out of the zucchini. You can peel the vegetable all the way through the seeds. You can purchase a julienne peeler here.

3. Using a nonstick medium sauté pan, heat the olive oil and garlic for about 2-3 minutes.

4. Sauté the zucchini on low-to-medium heat with the olive oil and garlic for another 5-7 minutes until al dente.

5. Add salt and pepper to taste.
