Creamsicle Chia Seed Pudding

- 2/3 cup chia seeds
- 1 cup vanilla soy milk (can substitute almond, coconut or rice milk)
- 1 cup orange juice
- 1-2 tablespoon sweetener of choice (sugar, agave, maple syrup)
Place chia seeds, soy milk, orange juice, vanilla extract, and sweetener in a bowl. Mix well to combine.
Pour into individual glasses, cover, and allow to thicken in the refrigerator overnight, or for at least 2 hours.
Top with additional sweetener, fruit, and/or coconut whipped cream, if desired.
