Sweet Potato Pancakes

- 2 cups flour
- 1/2 teaspoon cinnamon
- 1 teaspoon salt
- 3 teaspoons baking powder
- 2tbsp brown sugar
- 2 cups cooked & mashed sweet potatoes
- 2 eggs
- 1 1/2 cups almond milk
- 2 tbsp melted butter
Combine all dry ingredients in a bowl. Set aside.
Combine sweet potatoes, eggs, almond milk, and melted butter in another bowl.
Add dry ingredients to wet ingredients. Let batter sit for five minutes.
Heat and grease pan. Pour batter onto pan. Cook until golden brown.
Top with peanut butter and maple syrup.
