Summer is not only special because you’re off from school, but also because Oreo releases limited edition cookie varieties. The  limited edition S’mores Oreos are my new favorite, as this variety inspired my most recent parfait creation.

So the next time you’re in the need for a cool dessert, be sure to dabble with this recipe.

S'mores Oreo Parfait

  • Prep Time:5 minutes
  • Cook Time:10-15 minutes

    Ingredients

  • 1 package S’mores Oreos
  • 2 10 oz bags marshmallows
  • 4 tablespoon butter
  • 1 5.9 oz instant chocolate pudding
  • 3 cup cold milk
  • 1 semi-sweet chocolate bar

  • Step 1

    Prepare pudding by whisking pudding mix and milk for 2 minutes. Let set for 5 minutes.

  • Step 2

    In the meantime, melt 4 tablespoons of butter in the microwave for 45 seconds. Combine with 1 bag marshmallows in a large bowl and melt together for 1 minute in the microwave. Stir to combine.

  • Step 3

    Repeat step 2 with remaining butter and bag of marshmallows.

  • Step 4

    Break 1 ½ sleeves of Oreos into ¼ pieces and lay at the bottom of your dish to form the base.

    Layer about ½ of the pudding over the Oreos.

    Layer about ½ of the marshmallows over the pudding.

    Repeat steps 4-6 for a total of 2 layers, ending with marshmallows.

  • Step 8

    To enhance aesthetics, reserve a few Oreos and crumble over the top of parfait. Decorate the parfait with semi-sweet chocolate curls.

    Refrigerate for about half an hour before serving this sweet dessert to friends.
