There are few dishes I have ever made that did not benefit from the addition of avocado. This dish is no exception and is by far one of my favorite changing of the season dinners with a refreshing take on steak. The healthy heap of basil is inspired by pesto sauce. Mixed with lemon, it leaves a refreshing zing to the avocado’s creaminess.
My roommates asked for seconds… and thirds… I’m betting yours will, too.
Avocado Steak Pesto Stir-Fry with Lemon Zucchini and Tomatoes
- Prep Time:5 minutes
- Cook Time:20 minutes
- Total Time:25 minutes
- 1/2 of a large avocado
- 1 teaspoon crushed red pepper flakes
- 1 large steak fillet
- 1/4 of an onion
- 1 clove of garlic
- 2 teaspoon garlic salt
- 2 teaspoon black pepper
- 4 full sprigs of fresh basil
- 1/4 cup lemon juice
- 2 medium zucchinis
- 8-10 cherry tomatoes
- Avocado oil (for frying)
Fry chopped onion and garlic in a pan with avocado oil until onions are translucent. Add in sliced steak, basil and spices.
Once steak is cooked halfway, add in chopped zucchini, sliced tomatoes and avocado. Combine well. Cook until zucchini softens and steak is made as desired.
Serve over rice with extra avocado.
