The best part about baking cookies is licking the cookie dough (duh). So why not just make eggless edible cookie dough? Sandwich some ice cream in between two layers of the delish dough and you’ve got yourself one incredible dessert.
Cookie Dough Ice Cream Sandwich Bites

- 1 cup all-purpose flour
- 5 tablespoon brown sugar
- 6 tablespoon white sugar
- 4 tablespoon butter
- 1/4 teaspoon vanilla extract
- 2 tablespoon water
- 1 cup semi-sweet chocolate chips
- Vanilla ice cream
In a medium bowl, mix together brown sugar, white sugar and butter until completely smooth.
Stir in vanilla and water, then mix in flour until everything is well combined. Add chocolate chips. Shape dough into a loaf, wrap in plastic wrap and freeze for one hour.
Cut the loaf in half and spread one half in the bottom of a small square tin.
Spread vanilla ice cream over the first layer of dough. Freeze again for 10-15 minutes.
Remove from freezer. Gently flatten out the other half of the cookie dough loaf with your hands, then place it atop the layer of ice cream. Press down to finish off the ice cream sandwich. Freeze again if needed and then cut into squares for serving!
